Any kitchen where food is prepared should be kept clean at all times in order to deter vermin, to keep the area safe for those working there and to avoid risk of food poisoning to those who consume the food prepared there. This is true for the large industrial canteen kitchens as well as for those where food is prepared for a hotel or restaurant. However, it is equally true for the kitchen in a family home.
